Protein is often treated as a fitness ingredient. In reality, it is a foundational nutrient—and one of the hardest ingredients to bring into a sweet without losing the pleasure.

Protein has a branding problem.

Somewhere between shaker bottles, gym bags and oversized tubs of powder, it became associated almost entirely with building muscle. That is one of protein’s jobs, but it is far from the whole story.

Protein is present in every cell of the body. The amino acids it provides are used to maintain and repair tissues and to make enzymes, transport proteins and many of the molecules involved in everyday biological function. This work is continuous. Our bodies are constantly breaking proteins down and building them again.

That makes protein a basic part of human nutrition, not a specialist ingredient reserved for athletes.

It also raises an interesting question for anyone developing a modern sweet: if protein matters in the rest of our diet, why is it so often absent from the foods we eat for pleasure?

Protein Does Far More Than Build Muscle

The word “protein” tends to conjure up visible results: strength, muscle and physical performance. Its quieter roles receive less attention.

Dietary protein supplies amino acids, including nine that the body cannot make in sufficient quantities on its own. These essential amino acids must come from food. Once absorbed, they become part of a much larger pool the body draws upon for growth, maintenance and repair.

Muscle is part of that picture, and it matters throughout life—not only for people lifting weights. Preserving muscle supports mobility, independence and resilience as we age. But protein’s importance is not limited to muscle tissue. It contributes to the structure and function of the body in ways most of us never see.

None of this means that more is always better. Protein needs vary with age, body size, health, activity and overall diet. The useful point is simpler: protein is not a trend. It is a nutrient with a clear purpose.

Quality Matters as Much as Quantity

A gram of protein on a nutrition label tells us how much is present. It does not tell us everything about the protein itself.

Different protein sources provide different combinations of amino acids and are digested at different rates. Nutrition scientists often discuss protein quality in terms of essential amino acid content and digestibility—essentially, whether a protein supplies the building blocks the body needs and how readily those building blocks become available.

Milk proteins are widely considered high-quality proteins because they contain all nine essential amino acids. Their two main fractions, whey and casein, behave differently during digestion. Whey is generally absorbed more quickly, while casein is digested more gradually. Neither characteristic makes one universally “better.” It means that protein source and food context matter.

This is one reason a simple “high protein” claim can be less informative than it first appears. Quantity matters, but so do source, formulation, serving size and the rest of the food.

Protein is not one ingredient with one effect. Its amino acid profile, digestibility, amount and place within the complete food all matter.

Protein Can Change the Eating Experience

Protein also appears to influence how satisfying a meal or snack feels. In controlled studies, higher-protein meals often produce stronger short-term feelings of fullness than meals with less protein. The size and duration of that effect vary, and longer-term findings are not always consistent.

That nuance matters. Protein is not a switch that turns hunger off, and adding it to a food does not guarantee that everyone will feel the same way after eating it. Appetite is shaped by portion size, fiber, texture, sleep, stress, individual biology and the rest of the meal.

Still, the research gives food developers a reason to think beyond sweetness alone. A sweet can be designed only to deliver a brief burst of flavor, or it can be considered as part of a fuller eating experience. Protein is one piece of that broader picture.

We will look at satiety in more depth later in this series. For now, the important point is that protein can affect more than the number on the nutrition panel.

Putting Protein Into a Sweet Is Not Simple

On paper, adding protein to a sweet sounds straightforward. In practice, it can change almost everything.

Traditional sweets often depend on a careful balance of sugar, fat, milk solids, moisture and heat. Introduce more protein and the formula begins to behave differently. Protein binds water, reacts during heating and influences structure. Too much, or the wrong type used in the wrong way, can leave a sweet dry, chalky, rubbery or unmistakably like a protein bar.

That may be acceptable in a sports snack. It is much less acceptable in mithai, where softness, richness, aroma and a delicate finish are central to the experience.

During the development of ROHIT’S, we learned that adding more protein was not the same as making a better product. Each adjustment affected sweetness, texture and flavor. The work was not simply to reach a number on the label. It was to make the protein belong in the recipe.

That distinction is important. Good formulation is not about forcing nutrition into food at any cost. It is about finding a balance where nutrition and pleasure do not feel like separate ideas.

A Protein Claim Is Not a Verdict

Protein has become a powerful marketing word. It appears on cookies, chips, cereals, ice creams and drinks, often in large type on the front of the package.

The claim may be accurate, but it should not end the conversation. A high-protein product can still be heavily sweetened, highly caloric or built around ingredients that do not suit a person’s needs. Equally, a food does not become nutritionally poor simply because protein is not its main feature.

The most sensible approach is the one we introduced in the first article of this series: look at the whole food. Protein is valuable, but it works within a formulation, a portion and an overall eating pattern.

Why This Matters Beyond ROHIT'S

Protein is not only for athletes, and it does not need to arrive in a shake.

It can come from dairy foods, eggs, fish, meat, soy, legumes, nuts, seeds and many other foods. Different sources bring different nutrients, textures and cultural meanings, which is one reason variety matters.

For most people, the useful question is not whether every food is “high protein.” It is whether the overall diet provides enough protein from appropriate sources, spread across meals and foods they genuinely enjoy.

That is a more sustainable way to think about nutrition than turning a single nutrient into another rule.

What This Means for Intelligent Indulgence™

Protein was part of the ROHIT’S formulation from the beginning, but not because we wanted mithai to masquerade as a gym product.

We included milk proteins because they contribute meaningful nutrition and because they support the wider idea behind Intelligent Indulgence™: every ingredient should have a reason to be there.

The challenge was to preserve what makes a sweet desirable—its softness, aroma, flavor and sense of occasion—while asking more of the formulation. That took far more work than adding protein powder to an existing recipe.

ROHIT’S is still a sweet, not a meal replacement or a medical product. Protein does not make it perfect. It makes the formulation more considered.

For us, that is the difference between placing a claim on the front of a box and building an idea into the food itself.
